Mythology tells the story of Phyllis's lost love for Demophon, who left, forever, far from his beloved. Faced with the sorrow of this lost love, the gods decided to transform Phyllis into an Une Amande tree. Demophon, learning of his lover's fate, returns and embraces the tree so strongly that it immediately bursts into bloom.

Bitter almond oil is extracted from a small, spreading tree with dense foliage. Its fruit is a drupe resembling a small peach. The single seed is enclosed in a hard, stony shell called a pit, with a smooth and slightly granular texture, marked by three veins on one of its sides.
